Although earlier in the week the heat was oppressive, we were grateful that the weather broke just in time for our trip to the Historic Cooper Gristmill. Rebuilt in 1826 by Nathan A. Cooper, it is the last water-powered gristmill actively producing flour in New Jersey. We
experienced how difficult it is to grind wheat seeds by hand, and learned about the different types of millstones and the countries oforigin for the better ones. The mill is powered by water from Mill Pond, which is part of the Black River, and it was a truly scenic area. We received samples of flour and corn meal (which we are
excited to use in our cooking class), and then had a delightful lunch at a pub that stands on the spot where one of the Rockefellers had built a general store. It was a fun day of history for all of us!
